The 50 Best list included four Lima eateries: Central at number one, Maido at number six, Kjolle at number 28, and Mayta at number 47. In this year’s top 50, Kjolle is a newcomer.

For 15 years, Central has provided fine dining using Peruvian ingredients and traditions, under the direction of Virgilio Martinez and Pa Léon. The restaurant “takes diners through 15 different Peruvian ecosystems, categorised by altitude – from 15 metres under the Pacific Ocean to 4,200 metres up in the Andes,” according to the 50 Best website. Léon founded Kjolle alone.

The first restaurant in South America to be named “World’s Best” is Central.
